Registered dietitian-nutritionists have advised Nigerians against boiling unpeeled eggs and rice together in the same pot, warning that the practice could increase the risk of cross-contamination and foodborne infections.
The experts explained that bacteria such as Salmonella and E. coli may be present on eggshells and could contaminate rice during cooking, particularly as rice begins absorbing water before it reaches boiling temperature.
They also noted that eggshells can crack during cooking, causing egg contents to spill into the rice and potentially alter its taste, appearance and odour.
According to the nutritionists, while some people cook both foods together to save time, water, utensils and cooking gas, food safety should take priority. They recommended cooking the eggs and rice separately as the safest option.
The warning comes amid renewed online discussions about the practice, following reports of alleged food contamination linked to meals in which rice and eggs were cooked together.
